ZUCCHINI PESTO SAUCE

Ingredients

1 whole zucchini grated, 1/2 avocado, 2 tbsp olive oil, 1 tbsp nutritional yeast, 2 tbsp goat cheese, 2 tbsp parmesan, 1 tbsp pine nuts, 1 tsp basil, 1/4 tsp red pepper flakes, salt and pepper to taste, 1/2 cup water.


Directions:

Blend all ingredients together until emulsified. Add more water as necessary to achieve desired consistency.
