SWEET POTATO PEA POWER BOWL

Ingredients

1/3 cup chickpeas, canned, no salt added 1/3 cup chopped sweet potatoes 1/3 cup peas, canned, no salt added 1/2 cup raw spinach Drizzle of balsamic glaze Dash of black pepper


Directions

1. Boil 2 cups of water. Once boiling, add sweet potato until soft. 2. Chop sweet potato into bite-sized chunks. Add to bowl. 3. Open and drain chickpeas and peas. Add to bowl. 4. Add spinach to bowl. 5. Add black pepper to top and drizzle with balsamic.
