POTATOES & POLENTA

Ingredients:

2 cups chopped baby potatoes, 2 cups chopped carrots, 1 cup chopped parsnips, 6-8 slices of polenta, 1 tsp garlic powder, 1 tbsp olive oil, 1 tsp paprika, 1 tsp black pepper, 1 tsp basil, 1 tsp thyme, dash of salt

Directions:

​

Preheat oven to 375 degrees. Add all ingredients to a pan with non-stick spray. Bake until all vegetables are soft.
