OM(EGA-3)G, I'M FEELIN' GOOD GO-TO

Ingredients

4 oz salmon filet 

1 lemon, sliced 

1 tsp rosemary (dried or fresh)

Black pepper (to taste)

Drizzle of honey

2 tbsp walnuts

1 tbsp pine nuts

1 cup arugula

Drizzle of olive oil

Sprinkle of goat cheese

Directions

Salmon: 

Preheat oven to 400 degrees F

Prepare salmon on an oven safe tray with rosemary, black pepper, honey and lemon slices. 

Bake for about 25-30 minutes depending on your oven (bake until it's still bright pink in the center)

In a separate bowl, combine walnuts, pine nuts, arugula, goat cheese and olive oil. Serve on top of the salmon filet.
