EDAMAME QUINOA SALAD AND HOMEMADE SESAME SAUCE
Ingredients
1/2 cup quinoa, 2 cups chopped broccoli, 1 cup edamame, 2 eggs, 1/4 cup low sodium soy sauce, 1 tbsp sesame seeds, 1 tbsp ground ginger, 1/4 tsp red pepper flakes, 1 tbsp minced garlic.
Directions
Add quinoa to a boiling pot of water until grains are soft. Meanwhile, saute edamame and broccoli in minced garlic until soft. Add scrambled eggs. Make the sauce by adding soy sauce, sesame seeds, ginger, and spices. Add to vegetables. Add quinoa. Refrigerate until desired temperature.
