CITRUS COUSCOUS AND KALE SALAD

Ingredients:

2 cups kale, 1/2 cup beets, 1/4 cup pistachios, 2 clementines, 1/4 cup pomegranate seeds, 2 tbsp goat cheese, 1 cup couscous, juice from 1 lemon, 1 tbsp red wine vinegar, 1 tbsp olive oil, salt and pepper to taste


Directions:

Boil 3 cups of water, add couscous. Cook for about 3 minutes. Add all ingredients to a large bowl. serve.
