CITRUS COUSCOUS AND KALE SALAD

Ingredients

3 cups of kale, 2 clementines peeled, 1/3 cup pistachios, 1/4 cup pomegranate seeds, 2 tbsp crumbled goat cheese, juice from 1 whole lemon, 1/2 cup beets, 2 tbsp extra virgin olive oil, 1 tbsp red wine vinegar, 1/2 cup couscous, dash of salt and pepper.


Directions 

Add all ingredients to a large bowl and serve.
