CHEESY SPINACH CUPS
Ingredients for Filling:
- 4 cups spinach
- 2 tbsp ricotta cheese
- 2 tbsp vanilla greek yogurt
- 2 tbsp shredded mozzarella cheese
- Honey

Ingredients for Dough:
- 4 cups all purpose flour
- 8 eggs
- 1 tsp salt
- 1 tbsp vanilla greek yogurt

Directions for Dough:
- Add flour and salt to a bowl, sift
- Slowly combine flour mixture and eggs
- Add yogurt
- Form into a dough ball and let sit for about 1 hour

Directions for Filling:
- Preheat oven to 375
- Combine all ingredients
- Once dough has set, spray a cupcake pan with non-stick spray and use dough to line each cupcake hole. This will be the cup for the spinach filling
- Fill each dough cup with 1 tbsp of spinach filling
- Bake for 20-30 minutes. Drizzle with honey
