CAULIFLOWER QUINOA SPAGHETTI WITH VODKA SAUCE
Sauce
1. Sauté 1/2 chopped onion in 1 tablespoon of olive oil in a large pot on medium heat. 2. Once onion is soft (before it has browned), add 1/2 cup tomato paste, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 1/2 teaspoon oregano, 1/3 teaspoon black pepper, 1/3 teaspoon salt, and 2 cups of grape tomatoes. 3. After about 7 minutes, add 1- 1 1/2 cups of oat milk (depending on how light you like your vodka sauce). Turn down the heat to a simmer and cover with a lid. 4. After about 20 minutes, take the pot off of the heat and let cool for 5 minutes. 5. Pour sauce into a blender. Add 1 date (for sweetness, optional). Blend until completely smooth.
Cauliflower
1. Chop 1 head of cauliflower and sauté in 2 teaspoons minced garlic on medium heat. 2. Cook until soft. Set aside.
Pasta
1. Bring a medium pot of water to a boil. 2. Add quinoa pasta. Stir continuously to prevent sticking. 3. Once it has reached your desired texture, drain. Combine all ingredients and serve.
