BUTTERNUT SQUASH BREAD CASSEROLE

Ingredients:

- 4 cups chopped butternut squash

- Olive oil

- 1/2 large yellow onion

- 2 cups chopped whole grain bread

- 3 eggs

- 1 tsp oregano

- salt and pepper to taste 

- Cheddar cheese to your liking

Directions:

- Preheat oven to 400 degrees

- Add butternut squash and onions to a pan with olive oil, salt and pepper. Bake.

- In a large bowl, whisk eggs with oregano. Add bread and coat in egg mixture

- Once butternut squash is soft, add squash and onions and bread mixture to a casserole pan. Top with cheese. Bake for 20 minutes.
