BAKED ZUCCHINI & RICOTTA MELT
Ingredients:
2 large zucchini
2 cups marinara sauce
1 cup ricotta cheese
4-5 basil leaves
Mozzarella to top

Directions:
Preheat oven to 400 degrees F
Slice zucchini very thinly in strips and place in oven for ~ 5 minutes or until soft
Let zucchini cool to the touch
Once cool enough to touch, add a dollop of ricotta cheese on the end of each strip of zucchini
Roll the zucchini with cheese in it to form a roll-up
In an oven-safe casserole dish, add 1 cup of marinara sauce
Add roll ups into dish
Place basil leaves around the roll-ups
Add the rest of the sauce
Top with mozzarella cheese
Bake for ~20 minutes
